White Chili
- 1 Tbsp. canola oil
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 1 1/4 lb. turkey breast slices, cut in 1/2-inch pieces
- 2 c. white rice, cooked
- 1 (15 oz.) can Great Northern beans, drained
- 1 (11 oz.) can white corn (optional)
- 2 (4 oz.) cans diced green chilies
- 1 (14 1/2 oz.) can chicken broth
- 1 tsp. ground cumin
- hot pepper sauce (optional)
- 4 oz. low-fat Mozzarella shredded cheese
- parsley
- Cook onion and garlic in oil; add turkey and cook until done. Add rice, beans, corn, chilies, broth and cumin; cover and simmer for 30 minutes or until turkey is tender.
- Stir in hot pepper sauce to taste.
- Serve with shredded cheese; garnish with parsley. Average serving 274 calories, 69 mg. chol., 6 g. fat.
