Black Bean Burgers
- 2 cans black beans, strained & rinsed
- 1 can corn, drained
- 1/2 large red onion, chopped in big pieces
- 1 bunch fresh cilantro
- 1/2 cup salsa
- 2 teaspoons Sriracha sauce
- 1/2 teaspoon Mrs. Dash chicken seasoning
- 1/2 teaspoon chipotle seasoning (Frontera)
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 cup plain bread crumbs
- 2 tablespoons plain bread crumbs
- 1/2 cup cornmeal
- 2-3 tablespoons olive oil
- Place onions and cilantro in food processor and blend on high until finely chopped.
- Add the black beans and blend until mostly blended and broken down.
- Transfer to a large mixing bowl, and add the corn, salsa, and seasonings; mix well.
- Add the bread crumbs and mix.
- Put some cornmeal on a plate, shape the bean mixture into patties, and dip both sides into the cornmeal coating well.
- Heat a large skillet over medium heat, and add olive oil and bean burgers.
- Cook until browned on both sides, about 5 minutes per side.
- Serve on a plate, or in a bun with all of the burger fixings.
