Orange Nut Bread(Diabetic)
- 2 c. sifted all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 egg
- 1/2 c. skim milk
- 3 tsp. liquid sweetener
- 2 Tbsp. melted butter or margarine
- 1/2 c. artificially sweetened orange fruit spread
- 1/4 c. chopped walnuts or pecans
- Preheat oven to 350u0b0.
- Combine and sift dry ingredients.
- Beat egg.
- Add milk and sweetener.
- Add to flour mixture.
- Stir only until all flour is moistened, then gradually stir in melted butter or margarine.
- Fold in fruit spread and nuts, mixing as little as possible.
- Transfer to lightly greased loaf pan (9 x 5 x 3-inch). Bake for 1 hour and 40 minutes, or until loaf springs back when pressed lightly with finger.
- Cool before slicing.
