Spinach Lasagne
- 12 strips lasagne
- 1 packet fresh spinach
- 2 (15 oz.) tubs Ricotta cheese
- 4 oz. Mozzarella cheese
- 2 oz. fancy shredded Parmesan cheese
- 1 egg
- 1 large tin spaghetti sauce
- Put 12 strips of lasagne into a pot of boiling water and cook until tender.
- Clean spinach and cook in boiling water; drain spinach and chop into small pieces.
- Add Mozzarella cheese to the Ricotta cheese.
- Mix in the egg.
- Add chopped spinach.
- Blend mixture.
- Cover the bottom of a large, rectangular baking pan with a little of the spaghetti sauce.
- Add four strips of the cooked lasagne lengthways.
- Add a layer of spinach/cheese, using half the mixture.
- Cover with a layer of spaghetti sauce.
- Add another four strips of lasagne widthways.
- Use the second half of the spinach/cheese mixture and cover with spaghetti sauce.
- Add the remaining lasagne strips; cover these with spaghetti sauce and sprinkle the Parmesan cheese on top.
- Bake in a 350u0b0 oven for 1/2 hour.
