Pineapple Chicken Chow Mein
- 1/8 c. oil
- 1 c. chopped onions
- 3 c. chopped celery
- 1 (14 oz.) can pineapple chunks, drained
- 2 chicken bouillon cubes
- 1/2 c. water
- salt
- 1 (No. 2) can bean sprouts
- black pepper
- 2 Tbsp. brown sugar
- 2 Tbsp. cornstarch
- 1/4 c. soy sauce
- 2 1/4 c. cubed chicken
- 1 can chow mein noodles
- Heat oil in large saucepan.
- Add onions, celery, bean sprouts, drained pineapple, bouillon cubes dissolved in water, salt, pepper and brown sugar.
- Cover and bring to a boil.
- Mix cornstarch with soy sauce.
- Stir in vegetable mixture.
- Add cooked, cubed chicken and cook, stirring, for 5 minutes.
- Serve over chow mein noodles or rice.
