Incident At Vermicelli
- 3 1/2 Tbsp. olive oil
- 3 large cloves garlic, minced
- 1 1/2 onions, sliced
- 1 1/2 c. roasted red bell pepper strips
- 1 1/2 c. roasted green bell pepper strips
- 1 1/2 c. whipping cream
- 1/4 c. tomato paste
- 3 Tbsp. chopped fresh parsley
- 1 tsp. red pepper flakes
- salt and pepper to taste
- 4 c. chopped cooked chicken breasts
- 1 lb. vermicelli, freshly cooked
- In a large saucepan heat the oil over medium heat.
- Add the garlic and saute for 2 minutes.
- Add the onions and cook for 3 minutes.
- Add the onions and stir in the pepper strips and cook for 5 minutes.
- Add the cream and tomato paste and season with parsley, red pepper flakes, salt and pepper.
- Cook until the sauce thickens, about 10 minutes.
- Add the chicken and cook until heated through. Toss the vermicelli with the chicken mixture.
- Makes 8 servings.
