Oriental Chicken
- 1/2 c. chicken broth
- 1/4 c. soy sauce
- 1 Tbsp. unsweetened pineapple juice
- 1/2 tsp. ground ginger
- 1 Tbsp. dry sherry
- 1 1/2 lb. boneless chicken breasts, cubed
- 2 cloves garlic, minced
- 1/2 c. chopped red or green pepper (sweet)
- 1/2 c. thinly sliced celery
- 1 c. sliced mushrooms
- 1/4 lb. snow peas, trimmed
- 2 c. bean sprouts (about 5 oz.)
- Combine chicken broth, soy sauce, pineapple juice, sherry and ginger.
- Coat wok or large skillet with nonstick vegetable cooking spray. Heat over high heat. Brown chicken and garlic. Remove. Stir-fry peppers, celery, mushrooms and snow peas for 2 minutes. Add soy mixture and chicken.
- Cook 2 minutes. Add sprouts and heat through.
