Microwave Peanut Brittle(Total Cooking Time: 18 To 22 Minutes)

  1. Place sugar, corn syrup, water, salt and peanuts in 2-quart microwave-proof bowl or casserole.
  2. Cook on High-max power for 5 minutes, then stir.
  3. Cook on High-max power 13 to 18 minutes or until syrup separates into threads.
  4. This is the hard-crack stage or 300u0b0 on candy thermometer.
  5. Check temperature frequently during last few minutes.
  6. Do not leave thermometer in oven while cooking. Stir in butter, baking soda and vanilla just until light and bubbly.
  7. Pour onto buttered cookie sheet; spread, cool and break into pieces.
  8. Yield: about 1 1/4 pounds.
