The St. Anthony'S Girls High School Chutney Sandwich
- 3 cups cilantro leaves, packed (about a bunch's worth)
- 1 cup Crumbled Feta
- 2 cloves garlic
- 1-2 green chili pepper (not jalapeno)
- Salt to taste
- 1 1 loaf good quality white bread, preferably artisanal.
- 1 hothouse cucumber, cut into thin slices
- fresh cracked pepper to taste.
- Combine the cilantro, garlic, Feta and Chili peppers in a food processor and blend into a smooth paste. Taste and adjust for Salt.
- Slather generously on white bread, slap together (thin slices of cucumber and cutting off the crust is optional), and shove it at the family as the Canteen Aunty would. They'll keep coming back for more. For a more refined party setting, make sure that you add the thin layer of sliced cucumbers, cut out the crust, and shape into tiny triangles
