White Chocolate Cake
- 1/4 lb. white chocolate
- 1/2 c. boiling water
- 1 c. butter
- 2 c. sugar
- 4 egg yolks
- 1 tsp. vanilla flavoring
- 1/2 tsp. salt
- 2 1/2 c. + 2 Tbsp. plain flour
- 1 tsp. baking powder
- 1 c. buttermilk
- 4 egg whites
- 1 c. chopped nuts
- 1 c. Angel Flake coconut
- Melt the chocolate in the boiling water.
- Cream together butter and sugar; beat in the egg yolks, one at a time.
- Add the melted chocolate and vanilla.
- Sift together flour, salt and baking powder.
- Add this to the chocolate mixture alternating with the buttermilk.
- Do not cream.
- Beat the egg whites and fold in very gently.
- Stir in nuts and coconut.
- Pour in 3 (9-inch) layer cake pans greased and lightly floured.
- Bake at 350u0b0 for 30 minutes. Let cool and frost with favorite icing.
- My favorite is Seven Minute Icing.
