Applesauce Muffins
- 1 1/2 cups Quick oats
- 1 1/4 cups All purpose flour
- 1 teaspoon bakingpowder
- 3/4 teaspoon bakingsoda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup sweetend applesauce
- 1/2 cup milk
- 3 tablespoons vegetable oil
- 1/2 teaspoon vanilla extract
- 1 egg white
- 1 tablespoon melted butter
- 1/4 cup quick oats
- 1 tablespoon brown sugar
- 1/4 teaspoon ground cinnamon
- Preheat oven to 400. Line a muffin tin with cups. rnIn a large bowl whisk together the dry ingredients.rnIn another bowl whisk together the wet ingredients. rnAdd the wet to the dry ingredients and slowly stir until just combined.rnDo not overmix. Fill muffins cups with batter, 3/4 full.
- Make the topping by mixing all the ingredients together. Sprinkle over the muffin batter. Bake for 15-18 minutes. A inserted toothpick should come out clean.rnTransfer to wire rack to cool.
