Italian Pasta Stir-Fry

  1. Cook linguine according to package directions.
  2. Drain and keep warm.
  3. Heat oil in skillet over medium heat until hot.
  4. Saute garlic for 15 seconds or so.
  5. Add chopped onion and sliced zucchini, stir fry 2-3 minutes or until vegetables are crisp-tender.
  6. Add tomatoes, parsley and seasonings.
  7. Heat 1-2 minutes, stirring gently until heated through.
  8. Remove from heat, stir in pasta.
  9. Sprinkle Parmesan cheese on top before serving.
