Italian Pasta Stir-Fry
- 8 oz. linguine, or pasta of choice
- 2 medium plum tomatoes, chopped
- 1 medium onion, chopped
- 1 medium zucchini, sliced
- 1/4 c. fresh parsley, snipped
- 1 Tbsp. olive oil
- 2 garlic cloves, minced
- 1 tsp. dried basil
- 1 tsp. oregano
- 1/8 tsp. salt
- 1/8 tsp. pepper
- Parmesan cheese, to sprinkle on top
- Cook linguine according to package directions.
- Drain and keep warm.
- Heat oil in skillet over medium heat until hot.
- Saute garlic for 15 seconds or so.
- Add chopped onion and sliced zucchini, stir fry 2-3 minutes or until vegetables are crisp-tender.
- Add tomatoes, parsley and seasonings.
- Heat 1-2 minutes, stirring gently until heated through.
- Remove from heat, stir in pasta.
- Sprinkle Parmesan cheese on top before serving.
