Chilled Pasta Salad
- 4 oz. linguine or fettucine
- 1 c. thinly sliced fresh mushrooms
- 1 medium carrot, shredded
- 1/4 c. sliced green onion
- 6 cherry tomatoes, halved
- 2 Tbsp. salad oil
- 2 Tbsp. soy sauce
- 2 Tbsp. lemon juice
- 1/2 tsp. sesame oil
- 1 medium zucchini, thinly sliced
- 1 medium cucumber, thinly sliced
- 2 to 3 drops bottled hot pepper sauce
- 2 Tbsp. sesame seed, toasted
- Cook pasta according to package directions.
- Rinse and drain well.
- In bowl, toss pasta, mushrooms, carrot, green onion, zucchini, cucumber and tomatoes.
- Combine salad oil, soy sauce, lemon juice, sesame oil and hot pepper sauce.
- Cover and shake well.
- Pour dressing over pasta mixture and toss to coat. Sprinkle with toasted sesame seed.
- Garnish with parsley.
- Yield: 6 servings.
