Chicken A La King
- 1 Tbsp. reduced-calorie margarine
- 3 (4 oz.) skinned, boned and cut into bite sizes chicken breast halves
- 1/4 c. chopped onion
- 1/4 c. sliced mushrooms
- 1/4 c. all-purpose flour
- 2 c. skim milk
- 1/4 c. frozen English peas
- 1 (2 oz.) jar pimentos, drained
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 slices toasted bread
- 1/4 tsp. paprika
- Melt margarine in skillet over medium heat.
- Add chicken and onion; cook, stirring constantly, 3 to 5 minutes or until chicken is browned.
- Add mushrooms; cook 1 minute.
- Stir in flour and cook 1 minute, stirring constantly.
- Gradually add milk and next 4 ingredients; cook over medium heat, stirring constantly, until mixture thickens and bubbles.
- Serve chicken over toasted, nonfat bread.
- Sprinkle with paprika.
