Homemade Banana Bread
- 130 grams all purpose flour
- 150 grams whole wheat flour
- 170 grams brown sugar
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 3 ripe bananas
- 125 grams banana or plain yogurt (sometimes I use kefir!)
- 2 teaspoons vanilla extract
- 2 eggs
- 1 orange (you'll need only the grated peel)
- 1,5 teaspoons ground cinnamon
- 60 grams melted butter
- Preheat the oven to 180u0b0C.rnPeel, cut into slices and mash the bananas.
- Add butter, eggs and vanilla extract and stir.
- In a separate bowl mix flours, sugar, salt, baking powder and baking soda.
- Mix together dry and wet mixes, add the orange peel grated and the cinnamon.
- Fill a plumcake mold (lined with baking paper) with the mixture and bake at 180u0b0C for 40 minutes. (Ckeck with a wood skewer or a knife: stick it in the center and if it comes out clean the bread is ready!)
