Seafoam Cookies Or Squares
- 1/2 c. shortening
- 1/2 c. sugar
- 1/2 c. brown sugar, packed
- 2 eggs, separated
- 1 tsp. vanilla
- 2 c. sifted flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 Tbsp. milk
- 1 (6 oz.) pkg. chocolate bits
- 1 c. brown sugar, packed
- 3/4 c. peanuts
- Cream shortening with sugar and 1/2 cup brown sugar until light and fluffy.
- Beat in egg yolks and vanilla.
- Sift together flour, baking powder, soda and salt; stir into creamed mixture alternately with milk (the dough will be stiff).
- Press dough into greased 13 x 9 x 2-inch pan.
- Sprinkle chocolate bits over top. Beat egg whites until soft peaks form; gradually add remaining 1 cup brown sugar and beat until very stiff and glossy.
- Spread over dough in pan.
- Scatter peanuts evenly over top.
- Bake in slow oven (325u0b0) for 30 to 35 minutes.
- Cool in pan set on rack, then cut in squares.
