Pork Chop Scalloped Potato Casserole
- 4 boneless pork chops
- 1 large onion, sliced and separated
- 3 Tbsp. butter or margarine
- 1/4 tsp. pepper
- 1 c. chicken broth
- 2 Tbsp. vegetable oil
- 3 Tbsp. flour
- 1 tsp. salt
- 1 c. milk
- 4 potatoes, thinly sliced (approximately 4 c.)
- Brown chops in oil about 3 minutes on each side.
- Remove, add onion rings to fat remaining in skillet.
- Saute until tender, about 3 minutes.
- Remove from heat and reserve.
- Melt butter in a medium pan.
- Stir in flour, salt and pepper.
- Cook 1 minute, add milk and broth slowly.
- Cook, stirring constantly, until sauce thickens and bubbles.
- Remove from heat.
- Arrange sliced potatoes and chops in buttered (or sprayed with Pam) dish about 11 x 7 x 2-inch.
- Top with onion rings.
- Pour sauce evenly over potatoes, chops and onions.
- Cover baking dish.
- Bake in moderate oven (350u0b0) for 1 hour.
- Uncover and bake 10 minutes longer or until chops and potatoes are tender.
