Easy, Breezy Butternut Squash

  1. Peel Butternut Squash
  2. Dice Butternut Squash into 1 inch squares
  3. Add salt, pepper and olive oil, thyme (to taste)
  4. Place in roasting dish/pan and roast in oven at 350 degrees for about 15-20 minutes, until soft
  5. Remove from oven and allow dish to cool down
  6. Cut cherry tomatoes in 1/2 and place in rnseparate roasting dish/pan
  7. Add salt, pepper and olive oil (to taste)
  8. Roast in oven at 250 degrees for 10 minutes and remove from over
  9. In saute pan, add roasted Buttennut Squash and cherry tomatoes
  10. Add in 1/2 stick of butter
  11. Saute on medium/low heat for 5 minutes
  12. Add in mozzarella cheese (use amount to taste/your liking)
  13. Saute 2 more minutes and add salt and pepper (to taste)
