Layered Mint Chocolate
- 12 oz. semi-sweet chocolate chips
- 1 can (14 oz.) Eagle Brand sweetened condensed milk
- 2 tsp. vanilla extract
- 1 c. white confectioners deluxe baking pieces
- 1 Tbsp. peppermint extract
- 1 drop green food coloring (optional)
- In heavy saucepan over low heat, melt chocolate chips with 1 cup condensed milk.
- Add vanilla.
- Spread half the mixture into wax paper-lined 9-inch pan.
- Chill 10 minutes or until firm.
- Hold remaining chocolate mixture at room temperature.
- In saucepan, over low heat, melt white pieces with remaining milk.
- Mixture will be thick.
- Add peppermint extract and food coloring; stir.
- Spread on chilled chocolate layer.
- Chill 10 minutes longer or until firm. Spread reserved chocolate mixture on top.
- Chill 2 hours or until firm.
