My Husband'S Favorite Yeast Rolls
- 1/2 c. butter
- 1/3 c. sugar
- 1 1/2 tsp. salt
- 2 Tbsp. instant potato flakes
- 1 c. hot water
- 2 pkg. active dry yeast
- 1/2 c. lukewarm water
- 4 1/2 c. flour
- Combine butter, sugar, salt, potato flakes and hot water. Set aside.
- Sprinkle yeast on lukewarm water and stir until dissolved.
- Add yeast and one cup flour to potato mixture.
- Beat with mixer for 3 minutes.
- Gradually, add remaining flour to make soft dough that pulls away from sides of bowl.
- Place dough in greased bowl or baking dish.
- Turn over to grease top.
- Cover and let rise in warm place until doubled about 1 1/2 hours.
- Place dough on floured surface.
- Divide into about 24 pieces.
- Shape slightly into balls.
- Place balls into greased baking pan.
- Set aside and let rise for 45 minutes.
- Brush with melted butter and then bake until brown about 2 minutes.
