Minty Delight

  1. Scrape seeds from bean.
  2. Combine seeds, bean and milk; bring to a boil.
  3. Remove from heat and let stand for 30 minutes. Discard bean.
  4. Add sugar, gelatin, peppermint and salt; let stand 1 minute.
  5. Cook over low heat 5 minutes or until gelatin dissolves.
  6. Cool completely.
  7. Stir in yogurt and corn syrup.
  8. Pour into a bowl; cover and chill 8 hours.
  9. Using a 1-quart hand turned or 1/2-gallon electric freezer, freeze according to manufacturer's instructions.
  10. Chill 1 hour until firm.
