Minty Delight
- 1/4 large vanilla bean, split
- 1/4 tsp. peppermint flavoring
- 2 1/4 c. skim milk
- 1/2 c. sugar
- 1 envelope Knox gelatine
- dash of salt
- green food coloring (as desired)
- 1 1/2 c. plain, low-fat yogurt
- 1/4 c. light colored corn syrup
- Scrape seeds from bean.
- Combine seeds, bean and milk; bring to a boil.
- Remove from heat and let stand for 30 minutes. Discard bean.
- Add sugar, gelatin, peppermint and salt; let stand 1 minute.
- Cook over low heat 5 minutes or until gelatin dissolves.
- Cool completely.
- Stir in yogurt and corn syrup.
- Pour into a bowl; cover and chill 8 hours.
- Using a 1-quart hand turned or 1/2-gallon electric freezer, freeze according to manufacturer's instructions.
- Chill 1 hour until firm.
