Mama Cole'S Chow Chow
- 1 gal. chopped cabbage
- 12 onions
- 12 green sweet peppers
- 12 red sweet peppers
- 2 qt. chopped green tomatoes
- 5 c. sugar
- 2 1/2 qt. white vinegar
- 4 Tbsp. ground mustard
- 1 Tbsp. turmeric
- 1 Tbsp. ground ginger
- 4 Tbsp. mustard seed
- 3 Tbsp. celery seed
- 2 Tbsp. mixed whole spices
- 1/2 c. salt
- Chop onions and peppers.
- Mix all vegetables with 1/2 cup of salt.
- Let stand overnight.
- Drain.
- Place mixed spices in a permeable bag.
- Add sugar and other spices to vinegar.
- Simmer 20 minutes.
- Add all other ingredients and simmer until hot and well seasoned.
- Remove "spice bag."
- Pack hot chow chow into hot, sterilized jars and seal at once.
