Hummus And Sweet Potato Sandwich
- Necessary ingredients:
- 2/3 sweet potato
- 1 teaspoon olive oil
- 1 teaspoon salt
- 2 slices whole-grain bread
- 2 tablespoons hummus
- 1 handful kale
- 1 ounce feta cheese
- Optional ingredients:
- 1/4 avocado
- 1 handful sprouts
- 1/2 cup sliced tomatoes
- 1/2 cup sliced onions
- Preheat the oven to 375u0b0 F. Slice the sweet potatoes into 1/4-inch-thick circles and toss them in olive oil and salt, and roast for 20 minutes.
- While the sweet potatoes roast, toast the bread. Once toasted, spread the hummus evenly across one side of each slice.
- Top one slice of the bread with kale, feta cheese, and sweet potatoes. Add the remaining optional ingredients if desired. Place the other piece of bread on top and enjoy!
