Boston Cream Cake
- 1 1/2 c. whole wheat flour
- 1 tsp. baking soda
- 3/4 tsp. cream of tartar
- 3/4 c. honey
- 1/4 c. orange juice concentrate
- 1 to 2 Tbsp. water (as needed)
- 1 tsp. vanilla
- 1/8 tsp. orange extract
- 1 (4 oz.) jar apricot baby food puree
- 1 egg white (unbeaten)
- 3/4 Tbsp. finely grated orange peel
- 1 egg white, beaten
- 1 recipe Cocoa Frosting
- 1/2 recipe Vanilla Pudding
- Preheat oven to 325u0b0.
- In large bowl, combine flour, baking soda and cream of tartar.
- Set aside.
- In medium bowl, mix honey, orange juice concentrate, water, vanilla, orange extract, orange peel, 1 unbeaten egg white and apricot puree.
- Stir into flour mixture until just blended.
- Gently stir in 1 lightly beaten egg white.
- Do not overmix.
