Super Nachos
- 1 lb. lean ground beef
- 1 large onion, chopped
- salt to taste
- liquid hot pepper seasoning
- 1 (16 to 32 oz.) can refried beans
- 1 (4 oz.) can chopped green chilies
- 2 to 3 c. mild cheese, grated
- 3/4 c. prepared green or red taco sauce
- 1/4 c. green onions, chopped
- 1 c. pitted ripe olives, sliced
- 1 (8 oz.) can avocado dip or 1 avocado, mashed
- 1 c. sour cream
- parsley sprigs
- Brown beef and onion. Drain well. Season with salt and pepper, seasoning to taste.
- Spread beans in shallow 10 x 15-inch baking pan. Top evenly with meat mixture. Sprinkle chilies over meat mixture. Cover with cheese and drizzle with taco sauce. Cover and chill, if made ahead.
- Bake, uncovered, in a 400u0b0 oven for 20 to 25 minutes. Remove from oven and top with green onions, sour cream and olives.
- Mound avocado in center. Garnish with parsley sprigs. Serve with corn chips.
