Mushroom And Onion Quiche
- 8 oz. Swiss cheese, grated
- 1/2 c. powdered milk
- pepper to taste
- 3 eggs, beaten
- 1 Tbsp. vegetable oil
- 1 lb. fresh mushrooms, sliced
- 1 unbaked 9 or 10-inch pie shell (preferably whole wheat)
- 1/4 c. whole wheat flour
- 1/2 tsp. salt
- 1 c. milk, scalded
- 3 Tbsp. margarine
- 2 c. chopped onion
- 1 tsp. lemon juice
- 2 Tbsp. dry white wine
- Preheat oven to 325u0b0.
- Saute onion and mushrooms in margarine. Add lemon juice and wine.
- In a separate bowl, combine cheese, flour, dry milk, salt and pepper.
- Cool milk; add to cheese mixture and add eggs.
- Stir in onion mixture.
- Pour into pie shell.
- Bake 40 minutes.
