Easy Vegetable Soup(Makes 6 Servings)
- 1 Tbsp. vegetable oil
- 1/4 c. finely chopped onion
- 1 clove minced garlic
- 6 c. water
- 1 (14 oz.) can whole tomatoes, drained and chopped
- 3 c. sliced green cabbage
- 1/4 c. sliced celery
- 1/2 c. chopped carrot
- 5 tsp. instant beef bouillon
- 1/2 tsp. sugar
- 1/4 tsp. thyme
- 1/4 tsp. pepper or less
- 1 bay leaf, broken in half
- 1/2 c. uncooked ditalini macaroni
- In 3-quart saucepan, heat oil.
- Add onion and garlic and saute for 3 to 5 minutes, until onion is tender.
- Add water, tomatoes, cabbage, celery, carrots, instant bouillon, sugar, thyme, pepper and bay leaf.
- Bring to a boil; cover and simmer 30 minutes or until vegetables are crisp, but tender.
- Add macaroni and simmer 10 minutes or until macaroni is tender.
- Remove bay leaf.
