Cheese-Sauced Tuna Salad
- 6 slices bacon
- 1 (12 1/2 oz.) can tuna, drained and flaked
- 1 (11 3/4 oz.) carton deli coleslaw
- 1/8 tsp. white pepper
- 4 large tomatoes
- 2 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 2 tsp. dry minced onion
- 1/8 tsp. dry mustard
- 1/4 tsp. salt
- 1 c. milk
- 3/4 c. (3 oz.) shredded sharp Cheddar cheese
- paprika
- parsley (optional)
- Place bacon on a rack in a 12 x 8 x 2-inch baking dish.
- Cover with paper towels.
- Microwave at High for 4 to 6 minutes, or until bacon is crisp.
- Drain bacon; crumble and set aside.
- Combine tuna, coleslaw and pepper; stir well.
- Core tomatoes; cut to, but not through, the base of each tomato.
- Place on individual salad plates.
- Spread wedges slightly apart; fill each tomato with tuna mixture.
