Breakfast On A Bagel
- 8 eggs
- 1/4 c. cold water
- 2 green onions, thinly sliced
- 1/4 tsp. dried basil
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 4 bagels, cut in half
- 3 tsp. butter or margarine, divided
- 4 thin slices ham
- 4 slices American cheese
- In broiler or toaster oven, lightly toast bagels cut side up. In medium bowl, beat together eggs, water, green onions, basil, salt and pepper; set aside.
- In large nonstick skillet, melt 1 teaspoon butter over medium heat.
- Add ham and cook, turning often until lightly browned, about 1 minute.
- Lay on 4 bagel halves. Melt remaining 2 teaspoons butter in skillet over medium heat. Stir eggs and add to skillet.
- Cook 2 to 3 minutes.
- Stir occasionally until fully cooked.
- Divide up to put on bagel.
- Add cheese and cover with remaining bagel halves.
