Mrs. Denver'S Baked Chicken Croquettes
- 4 Tbsp. butter or margarine
- 5 Tbsp. flour
- 1/4 tsp. salt
- 1 c. milk
- 3 hard-cooked eggs, chopped
- 1 Tbsp. grated onion
- 2 1/2 c. chopped cooked chicken
- 2 Tbsp. grated Cheddar cheese
- 1/2 tsp. Worcestershire sauce
- 1/2 tsp. curry powder (if desired)
- 1/2 c. fine cracker crumbs
- 3 Tbsp. butter or margarine
- tomato sauce
- Make a thick white sauce of the first 4 ingredients in a medium saucepan.
- Cool slightly.
- Add the eggs, chicken, cheese and seasonings.
- Chill until easy to handle.
- Preheat oven to 400u0b0.
- Shape chicken mixture into 12 cone or patty shapes; roll in crumbs and place on a baking pan that has been greased with 3 tablespoons butter or margarine.
- Bake until well browned, 20 to 30 minutes.
- Serve with sauce.
- Serves 6.
