Palatschinken (Viennese Pancakes)
- 1 3/4 c. flour
- 2 c. milk
- 2 egg yolks
- 1/4 c. sugar
- dash of salt
- 3 Tbsp. fat
- apricot jam
- 1 Tbsp. sugar
- 2 sticks butter or margarine
- 18 oz. jar peanut butter
- graham cracker crumbs (about 4 c.)
- 1 lb. box confectioners sugar
- 12 oz. bag chocolate chips
- 1 sq. unsweetened chocolate
- Beat butter and peanut butter together until creamy.
- Add graham cracker crumbs and confectioners sugar a little at a time until well blended.
- (Note:
- This mixture is very thick and heavy. I use a food processor to blend the ingredients.
- If you use a mixer, dough hooks are helpful.)
- Press the mixture into a 9 x 13-inch edged cookie sheet.
