Liptauer Cheese Spread
- 8 ounces Farmer's curd cheese, or a drier large curd cottage cheese
- 2-3 tablespoons Sour cream or nonfat Greek yogurt
- 2 tablespoons Each minced chives,dill, and parsley
- Salt and freshly ground pepper to taste
- 1/2 teaspoon Caraway seeds, lightly crushed
- 1-2 teaspoons Sweet paprika, to taste
- 1/4 teaspoon Hot paprika, optional
- In a large bowl, using a fork, blend the curd cheese, sour cream, and herbs. Add the spices, using a generous hand with the pepper and paprika (but go easy on the salt, as the curd cheese may be salty). Blend well. Go for a spreadable consistency.
- Scrape into a serving dish and cover. Chill for several hours to allow flavors to blend. Garnish with a sprinkling of minced fresh herbs or paprika just prior to serving with crisp crackers...rye toasts are particularly tasty.
- To modify this into a dip, add an additional tablespoon or two of sour cream to achieve a dippable texture. Serve with an assortment of crudites. The flavors go well with cucumber spears, celery sticks, and pepper wedges.
