Pesto Chicken Pizza
- Pesto Sauce
- 1 cup packed fresh basil leaves
- 3 garlic cloves
- 1/2 cup olive oil
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese
- 1/2 cup walnuts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Pizza
- 6 chicken cutlets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon Montreal chicken seasoning
- 3 sliced tomatoes
- 1/3 cup shredded cheddar cheese
- 1 cup mozzarella cheese
- 1 prepared pizza dough
- Place basil and garlic in a food processor, and mix on high until well minced.
- Add the other ingredients and mix on high until smooth.
- Add more olive oil, turn to high, and mix until very well blended with pourable consistency.
- Cook the chicken for about 4-5 minutes on each side in a skillet over medium heat in olive oil and top with spices.
- Cut the chicken into small pieces.
- Spread about 1/2 cup of the pesto sauce over prepared dough.
- Top evenly with the chicken, then tomatoes, then both cheeses.
- Bake at 425* for 15 minutes.
