Stuffed Red Cabbage Rolls
- 1 medium red cabbage
- 1 Tbsp. butter
- 3 slices bacon, diced
- 4 slices stale bread, cubed
- 1 medium onion, diced
- 5 dried apple rings, diced
- 1 c. whipping cream
- 1 c. dry red wine
- ground cloves
- ground pimiento
- mace
- salt
- pepper
- Remove 8 to 10 leaves.
- Wash, then blanch for 3 minutes in salt water.
- Remove and pat dry.
- Melt the butter in a frying pan and render the fat from the bacon.
- Add bread cubes and onion.
- Fry until crisp and brown.
- Add the apple pieces, cream and red wine. Remove from stove.
- Let stand for 15 minutes.
- Add seasonings to taste.
- Place small amount of filling in leaves and roll them up. Roll a second leaf around each roll.
- Place the stuffed leaves closely together in a greased dish.
- Bake at 350u0b0 for about 30 minutes.
- Serve.
