  1. After peeling and grating the vegetables, have all ingredients ready in individual bowl. Preheat oven to 375. Combine all wet ingredients in a large bowl wisking as you add each ingredient.
  2. Add grated pumpkin and grated ginger and whisk thise in.
  3. Add coconut add coconut milk and half the reconstituted gluten free powdered milk. And whisk away.
  4. Add all other ingredients except cassava and wisk properly. Lastly add the Cassava and combine well using a woden spoon. This completes the batter. It will look wet and feel slushy thats ok.
  5. Place in 1 large buttered rectangular baking pan or 2 smaller baking dishes. Bake at 375 for one hour. Check using a toothpick into the center, if it comes out without any batter its done, NOTE: the toothpick may have some moisture, thats ok! But if it cones out with bits if batter bake for another 15 minutes, then test again.
  6. Let the baked pone cool for at least 20 minutes, then cut into 1" x 4" pieces or smaller for parties, you may top with whipped cream or chocolate sauce or Ice cream or all of those. But in Trinidad most people eat it plain. Terrific at patties, can be made ahead.
