Crab Louis In Avocado Halves
- 1 egg yolk
- 2 tsp. prepared mustard
- 1/2 tsp. Worcestershire sauce
- 2 tsp. red wine vinegar
- 1/2 c. peanut or vegetable oil
- 1 Tbsp. chili sauce
- 1/4 c. chopped scallions
- 4 large stuffed green olives, chopped (1/4 c.)
- salt and pepper
- 1 lb. lump crab
- 4 ripe avocados
- lettuce leaves
- Put yolk in mixing bowl; add mustard, Worcestershire sauce and vinegar.
- Beat with wire whisk.
- Add oil gradually, beating rapidly when thickened.
- Add chili sauce, scallions and olives. Season with salt and pepper.
- Put crab in mixing bowl; add half sauce.
- Mix gently.
- Split avocados in half and discard the pits. Pile equal portions of crab into avocado halves.
- Spoon remaining sauce over.
- Serve on lettuce leaves.
