Mardi Gras Dinner
- 3 Tbsp. flour
- dash of pepper
- 3/4 tsp. salt
- 1/2 medium onion
- 1 2/3 c. evaporated milk
- 1 1/2 c. shredded Cheddar cheese
- 2 Tbsp. grated Parmesan cheese
- 1 1/3 c. Minute rice
- 1/2 tsp. oregano
- 1 1/3 c. water
- 1 can tomatoes
- 1/4 c. melted oleo
- 1 Tbsp. chopped parsley
- 1 can tuna fish, drained
- dash of paprika
- Stir flour, pepper and 1/4 teaspoon salt into melted oleo in saucepan.
- Mix until smooth.
- Gradually add evaporated milk. Stirring constantly over medium heat, cook and stir until sauce is thickened.
- Then add cheese and stir until cheese melts.
- Place Minute rice, parsley, oregano, water and the remaining salt.
- Stir to moisten all rice.
- Place 2/3 of tomatoes.
- Top with onion and tuna fish. Spread on cheese sauce.
- Garnish with remaining tomato. Sprinkle with paprika.
- Bake at 375u0b0 for 15 to 20 minutes.
