Mom'S Spicy Pumpkin Pie
- 1 1/2 c. canned pumpkin
- 3/4 c. brown sugar
- 1/2 c. milk
- 3 egg yolks, beaten
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 envelope unflavored gelatin
- 1/4 c. cold water
- 3 egg whites
- 1/4 c. sugar
- Combine pumpkin, brown sugar, milk, beaten egg yolks, salt and spices in top of double boiler.
- Cook about 10 minutes, stirring often.
- Soften gelatin in cold water.
- Dissolve in pumpkin mixture. Pour into medium size bowl.
- Chill just until beginning to set. Beat egg whites until foamy.
- Add sugar 1 tablespoon at a time and beat well after each addition until meringue stands in soft peaks. Fold into pumpkin mixture.
- Pour into baked pie shell.
- Chill until firm enough to cut.
