Peperonata Turkey Burgers

  1. Thoroughly combine all the ingredients, cover and refrigerate for at least 2 hours. ( A little longer is better)
  2. Core and seed the bell peppers and slice into thin strips. Peel the onion and slice thinly. Mince the garlic.
  3. Heat the oil in a large saute pan and add the peppers. After a few minutes, add the sliced onion. Saute over medium heat until the peppers and onions soften. This could take about 10 minutes.
  4. Add the garlic, salt and pepper and saute a few more minutes until the garlic becomes fragrant.
  5. Stir in the water and tomato sauce, bring up to a simmer and simmer with the pan partially covered until the peppers become very soft and the sauce thickens up a bit. Stir in the basil and oregano.
  6. Form the turkey mixture into 4 patties and grill them on an oiled grill over medium heat. About a minute or two before the patties are done, place a slice of cheese on top.
  7. Place the burgers on the buns and top with some of the peperonata.
