Chi Chi Beef
- 2 Tbsp. peanut oil
- 4 green onions, cut into 1-inch pieces
- 1 Tbsp. fresh ginger root, peeled and minced
- 1 lb. boneless beef chuck, cut into 1-inch cubes
- 1/4 c. sugar
- 2 Tbsp. soy sauce
- 1/3 c. dry sherry
- 1 c. water
- 1/2 tsp. dried red pepper flakes
- Heat oil in skillet or wok.
- Add onions and ginger root, stir-fry 1 minute.
- Add beef, stir-fry 2 minutes or until brown. In a separate bowl, mix together sugar, soy sauce, sherry, water and red pepper flakes until sugar dissolves.
- Add to wok.
- Lower heat and simmer (covered) for 30 minutes.
- Uncover, increase heat to high, cook until sauce thickens, about 30 minutes.
- Remove from skillet or wok.
- Serve hot.
- Makes approximately 40 pieces.
