Ritzy Fish Fillets
- 10 to 12 fish fillets (any kind of fish)
- 1 pkg. shredded Mozzarella cheese
- 1 box Ritz crackers
- butter
- lemon juice
- salt and pepper to taste
- seafood sauce (for dipping; not added in recipe)
- Preheat oven to 350u0b0.
- Wash fish fillets, then dry them off with a paper towel to absorb some of the excess water.
- Lay as many as you can close together in a 13 x 9 x 2-inch glass baking dish. Put a little dab of butter (1/2 teaspoon) on each fillet.
- Pour a little lemon juice over all fillets.
- (I use a squeeze bottle of lemon juice and just "squeeze" it all over.)
- Add salt and pepper to taste.
- Bake at 350u0b0 for 20 minutes.
- Pull out pan and crumble Ritz crackers (1 to 2 rolls from package in a box) all over fillets.
- Add shredded Mozzarella all over crackers.
- Bake another 5 to 10 minutes, until cheese is melted.
- Dip into seafood sauce as you eat, if desired.
