Curried Quiche With Greens

  1. Preheat your oven to 350F.
  2. In a skillet, heat oil and saute onion and garlic until tender.
  3. Transfer to a food processor with all other ingredients except the pie crust; puree in food processor until relatively smooth (you can leave a few chunks).
  4. Pour into pie crust, smoothing over the top.
  5. Bake for 45-55 minutes at 350 F, until top is firm and crust is golden.
  6. Serve with a side of roasted sweet potatoes.
