Penne Caprese Pasta Salad

- 16 ounces penne pasta
- 1 bunch broccoli florets, cooked
- 1 cup grape tomatoes, sliced in half
- 1 cup kalamata olives, sliced in half
- 1/2 red onion, finely chopped
- 8 ounces mozzarella pearls
- 10-15 fresh basil, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Balsamic Vinaigrette
- 1/3 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons balsamic glaze, divided
- 1 teaspoon dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 garlic cloves, minced
- 1-2 tablespoons balsamic glaze
- Cook the pasta according to package directions and place in a large mixing bowl.
- Add the remaining ingredients to the pasta, and mix well.
- Whisk all dressing ingredients except balsamic glaze together in a mixing bowl using a fork until it thickens.
- Pour over the salad, and mix well.
- Drizzle balsamic glaze over the whole pasta salad, or each individual portion.
