Deborah'S Sweet & Sour Chicken
- 1/2 C. sugar
- 2 Tbsp. cornstarch
- 1/2 C. white vinegar
- 8 oz. can pineapple chunks, save juice
- 1/4 C. soy sauce
- 1/2 tsp. salt
- 1 tsp. minced garlic
- 1/2 tsp. paprika
- 1/2 tsp. ground ginger
- 1 C. chopped celery
- 1C. chopped onion
- 3 C. cooked, diced chicken
- 1 C. chopped green pepper
- 1-4oz. can mushrooms, drained
- 2 C. regular, uncooked rice
- 1-8oz. can sliced water chestnuts, drained
- In medium saucepan, combine sugar and cornstarch; stir in vinegar, juice from pineapple, soy sauce, salt, garlic, paprika, ginger, celery and onion.
- Bring to a boil; reduce heat.
- Simmer, stirring constantly until thickened.
