Cheese Fruit Mold

  1. Pour boiling water on gelatin, add sugar in large bowl, stir until gelatin and sugar is dissolved.
  2. Beat in cream cheese until smooth.
  3. Stir in pineapple (with syrup), Cheddar cheese, cottage cheese and lemon juice.
  4. Pour into 12-cup mold.
  5. Refrigerate until firm, about 8 hours.
  6. Unmold onto salad greens and serve with Honey Dressing and crackers.
