Peach Cornmeal Muffins
- 1/2 cup butter
- 1/2 cup sugar
- 1 large egg
- 1 cup all-purpose flour
- 1/2 cup white cornmeal
- 1/8 tsp. salt
- 1/8 tsp. ground nutmeg
- 1 1/2 tsp. baking powder
- 1/2 cup milk
- 1 cup finely chopped
- fresh peaches (about 2 medium peaches)
- Preheat oven to 300u0b0.
- In a large bowl cream butter and sugar, beating until light and fluffy.
- Add the egg and beat well. In a separate bowl combine flour, cornmeal, salt, nutmeg and baking powder.
- Mix well.
- Add to butter mixture in two parts alternating with milk, stirring after each addition just until combined.
- Add the fresh peaches and stir to blend.
- Fill greased muffin tins 2/3 full with the batter and bake in the preheated oven for 25 minutes or until golden brown.
- Cool for 5 minutes on wire rack, gently remove from muffin tins and allow to cool completely.
- Yield:
- 1 dozen.
