Tomato Sauce
- 1/4 c. oil
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 2 lb. ground beef
- 3 (No. 2) cans tomatoes
- 1/2 c. water
- 2 bay leaves
- 1/2 c. chopped celery
- 1/4 c. chopped parsley
- 1 1/2 Tbsp. salt
- 2 tsp. sugar
- 1/4 tsp. pepper
- 1 tsp. basil
- Heat oil in a large kettle or Dutch oven.
- Add onions and garlic; saute 5 minutes.
- Add the ground beef; cook until brown, breaking the meat up with a fork until it cooks.
- Stir in the remaining ingredients.
- Bring the mixture to a simmer, then cook over low heat until it is thick and rich, 45 minutes to an hour. Remove the bay leaves; skim off the fat.
- This makes about 10 cups, plenty for 2 hearty family dishes.
- It freezes well.
