Turkey Vegetable Chili(Eat Healthy)
- 1/2 c. green bell peppers, chopped
- 1/4 c. onion, chopped
- 2 cloves garlic, chopped
- 2 Tbsp. olive or vegetable oil
- 3 c. cut up cooked turkey or chicken
- 1/2 c. water
- 1 Tbsp. fresh or 1 tsp. dried oregano leaves
- 1 Tbsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1 (16 oz.) can whole tomatoes (undrained)
- 1 (10 oz.) pkg. frozen mixed vegetables
- 2 c. zucchini, cut in 1/2-inch slices
- Cook bell peppers, onion and garlic in oil in a 3-quart pan over medium heat, stirring often, until onion is tender.
- Stir in remaining ingredients, except frozen vegetables and zucchini. Break up tomatoes.
- Heat to boiling; reduce heat.
- Cover and simmer for 1 hour, stirring occasionally.
- Stir in vegetables and zucchini.
- Heat to boiling; reduce heat and simmer for 5 minutes, until zucchini is crisp-tender.
- Makes 6 servings.
