Turkey Vegetable Chili(Eat Healthy)

  1. Cook bell peppers, onion and garlic in oil in a 3-quart pan over medium heat, stirring often, until onion is tender.
  2. Stir in remaining ingredients, except frozen vegetables and zucchini. Break up tomatoes.
  3. Heat to boiling; reduce heat.
  4. Cover and simmer for 1 hour, stirring occasionally.
  5. Stir in vegetables and zucchini.
  6. Heat to boiling; reduce heat and simmer for 5 minutes, until zucchini is crisp-tender.
  7. Makes 6 servings.
