Ziti And Shrimp
- 12 oz. ziti
- 1 1/2 c. broccoli florets
- 1 medium red pepper, sliced
- 1/2 tsp. oregano
- 2 tsp. mandarin rind
- 1/2 tsp. ground ginger
- 1/2 c. half and half
- 2 tsp. vegetable oil
- 1 medium yellow pepper, sliced
- 2 green onions, chopped
- 1 lb. medium sized shrimp
- 1 clove garlic, minced
- 3/4 ground ginger
- 1 (11 oz.) can mandarins, drained
- Cook ziti according to package directions.
- Drain well, place in a large serving dish, cover with foil and keep warm.
- Heat oil in large skillet over medium heat.
- Add broccoli, pepper, onions and oregano.
- Cover and cook for 8 minutes, stirring occasionally. Stir in the shrimp, mandarin peel, garlic, salt and ginger.
- Cook uncovered for 4 to 6 minutes or until shrimp is bright pink.
- Stir in the half and half, bring to a boil, reduce heat, cook covered for 2 minutes.
- Pour sauce over ziti, toss well.
- Place well drained mandarins over top, serve.
- Serves 4 to 6.
