Mighty Minestrone
- 1 can (15 to 19 oz.) cannellini beans, undrained
- 5 small green cabbages (about 1/2 lb.), shredded
- 1 large onion, chopped
- 1 Tbsp. olive oil
- 1 pkg. (9 oz.) frozen Italian green beans, thawed
- 1 pkg. (10 oz.) frozen butter or lima beans, thawed
- 1 pkg. (10 oz.) frozen sliced carrots, thawed
- 1 can (16 oz.) peeled tomatoes, undrained
- 2 tsp. dried basil
- salt and pepper to taste
- In medium bowl use a fork to mash cannellini beans in their liquid until smooth; set aside.
- In saucepot or Dutch oven, saute cabbage and onion in oil 8 to 10 minutes until cabbage is wilted. Add remaining ingredients and 2 cups water.
- Cover and bring to boiling.
- Reduce heat; recover and simmer 30 minutes.
- Serve with grated Parmesan cheese.
