Mighty Minestrone

  1. In medium bowl use a fork to mash cannellini beans in their liquid until smooth; set aside.
  2. In saucepot or Dutch oven, saute cabbage and onion in oil 8 to 10 minutes until cabbage is wilted. Add remaining ingredients and 2 cups water.
  3. Cover and bring to boiling.
  4. Reduce heat; recover and simmer 30 minutes.
  5. Serve with grated Parmesan cheese.
